So, In February 2011 I was diagnosed with Celiac Disease...wanna know more? Go here!

I get a lot of questions about Celiac Disease and I'm a secret chef so I decided to start this blog so I can get the word out and share some of the meals I've cooked as well as some of the things I've found along the way. I'm very active and I refuse to let Celiac Disease keep me from doing all the fun stuff I'm used to :-)

I love Kozy Kitchen!

I have been hearing about Kozy Kitchen and how awesome it is, so I did a little research! I looked up the site and read over the menu and I was in love, I knew I had to go there and enjoy myself without worrying about Celiac disease.
 

I had the most exquisite Buffalo tacos! They came with this guacamole...I think it was the best guac I've had to date. The black beans were GREAT! They tasted so fresh and the salsa was flavorful and fresh too!!


I also had the "Oh My God" cake. It's hard to explain...it had the most amazing vanilla frosting, chocolate cake, peanut butter frosting layered inside. Tasting is believing

I'm the Cupcake Bandit!

I have a true love and passion for cupcakes! Before my diagnosis I went to every cupcake place possible withing a 30 minute driving area and when I traveled for work I would try to eat a cupcake in each city. When diagnosed I felt that that this quest was over, but fear not Sprinkles to the rescue!!! Sprinkles has a delectable, moist, and tantalizingly YUMMY Red Velvet cupcake! Yaaay! BUT they ONLY have Red Velvet...I'm really missing variety in my life and I'm really sad about it. I'm still looking into other places in my area with GF cupcakes.


I ate one...and saved one for later since Sprinkles is not that close to my house...



Recently on a trip to Atlanta I stopped by Sugar Shack and had an eye catching double chocolate GF cupcake...unfortunately it was TOO much chocolate (I never thought I'd say that), but only because the actual cake was a bit too dry and it didn't taste like Milk Chocolate and if you have a heavy dark chocolate frosting on top it can be too much. But at least it was pretty...right?

If I find any new places I'll be sure to post 'em!

Fried & Fabulous

So I haven't been able to eat fried foods unless I have fried them myself, but fried food isn't great unless it's breaded too, right? So I got some Bob's Red Mill Gluten Free Flour and fried myself some chicken! I think I did a pretty good job if I could say so! I seasoned the chicken as well as the flour, I think that's they key. And I store the leftover flour in a plastic baggie until the next go round. I try to stay away from using so much black pepper, because it's indigestible, but I use a touch of cayenne to make taste buds happy!

Comfort Food

So I've really been missing eating a nice crispy gooey grilled cheese :-( But fear not I have come up with a DELICIOUS solution! I bought this bread made by a company called Ener G:


And I buttered it up and made my self a grilled cheese...maybe two, but who's counting right? It didn't taste funny at all. The Boo (Non-Celiac) even had one and liked it!


Just a heads up, this bread has a year shelf life if left UNopened! But once you open it plan on eating bread all week. It needs to be kept in an airtight container and I keep it in the refrigerator as an added umph.

Lunchtime

I really like food & eating in general and it's really easy for me to snack all day, so I try to pack a decent lunch. I usually make my lunch and throw in some fun extras like:

Applesauce...Pear is my favorite


I also like to eat a couple Almond M&M's. If you want the key to my heart I suggest you get me the largest bag of Almond M&M's you can find!


Sometimes I like to treat myself to a Cherry Coke, but only occasionally. If I don't spice up my lunch here and there I get bored and end up spending a fortune on eating out :-(

Eating Out...

I thought that eating out would be VERY difficult, but it's not as bad as I thought. I have a couple of favorite place that I really like to frequent.

I miss ordering Papa Johns quick an easy, but I can get pizza without having to make it. I love, Love, LOVE BJ's Brewhouse! Here's the GF Hawaiian Pizza I got
I also love Houlihan's! They have a great variety of salads, but good entrees too! It's fun atmosphere and people don't even notice when you choose to eat something off the GF menu.

I already mentioned Pei Wei...

By far I eat at Jason's Deli ...religiously...almost. I wish they had some sort of rewards system (Do you hear me Jason?? LOL)

I really like Chick-fil-a they have a great reputation in the GF community! They fry their waffle fries in separate fryers than their breaded items= GENIUS!

Hmmm, what next?? Oh! I have heard rave reviews about Subway, so I'll review that in the future!

Desserts

Desserts really aren't that big a deal when it comes to Celiac. You can still have sorbet & plain ice creams, but I love a glass of cold milk with cookies. I found this AWESOME cookie dough and although it's never gonna be what I grew up with it's a start.



I have found that French Meadow Bakery makes some pretty amazing GF selections.

You know what I miss?? I miss fortune cookies!! UGH I went to Pei Wei (Which has a small but delish GF menu) and my Boo had fortune cookies, but I had to just watch...

Snacking

I'm a snacker, I think it's in my blood...I swear I eat 5 times a day. Anyway, I used to snack on junk...LOTS of junk. But now I'm eating Nut Thins & Nutella. Can I just say that I'm completely in love with Nutella. I'm ashamed to say that I dream about eating it right out of the jar.



 These "crackers" take some getting used to, when you're used to Saltines this is a different ballgame. Oh and if you plan on having Nutella with these please be careful:

My first meal

Back in March I cooked my first GF meal:

I used Philadelphia Cooking Creme and Rice Noodles!! I really like the Philly Cooking Creme I bought it in Plain, Garlic, and Southwest. I'm trying to incorporate veggies in my diet more since I've gotten my diagnosis.
