I get a lot of questions about Celiac Disease and I'm a secret chef so I decided to start this blog so I can get the word out and share some of the meals I've cooked as well as some of the things I've found along the way. I'm very active and I refuse to let Celiac Disease keep me from doing all the fun stuff I'm used to :-)

Quinoa Adventure!

I recently bought some Ancient Harvest Quinoa shell pasta to make macaroni and cheese. Before my diagnosis I made mac 'n cheese ALL the time I loved it...sometimes I would eat it as my main meal! I can't remember the last time i had mac 'n cheese.

This is what it looks like when you boil it. You have to make sure that it's cooked all the way even if it takes longer than you are used to. The water will turn yellowish, but that's because it has some corn starch in it.



I like to use Velveeta and whole milk in my macaroni and cheese. Here is the finished product. It was pretty good! The texture was slightly different, but cheese makes everything better.

I've talked about Nutella in the past, but I've taken my love to a new level! I recently bought Nutella in a bigger size and I'm hoping I can keep it around longer now. If you haven't tried Nutella try it, you'll be surprised!

Grab 'n Go


Like I promised in my previous post I visited Subway for the gluten free sandwich and gluten free brownie. I must say I am impressed. I have gone to three different  Subways around town and every single one of them has changed gloves, used a pre-packaged knives, and been very sensitive to this Celiac's requests.

 And I must say that the brownie is SUPERB! Again this brownie is made by our friends at French Meadow Bakery, they have done it gain. The brownie doesn't have a funny taste or anything, it tastes like an honest to goodness normal brownie...well better than normal.




The gluten free bread that Subway uses is actually very soft and it's got the same texture as any normal bread. They toast it and you pick your toppings, they even give you a list of things that are gluten free so you can double check before ordering, so even though I've been three times I've had something different each  time! I love variety!

Breakfast at Kozy Kitchen

In a previous post I talked about Kozy Kitchen and how awesome it is for any Celiac, so of course I had to go back. This time I went there for breakfast.

I ordered the breakfast tacos with sausage and they were YUMMY!!! They used corn tortillas, fluffy eggs, creamy raw cheese, and they have a delicious fresh salsa that they put on the side. The sausage they used wasn't what I was expecting, but I was very pleasantly surprised.



Everyone should go to Kozy Kitchen, especially for breakfast/lunch; they have fresh squeezed juice that is amazing! I felt like I was drinking an actual orange, lol. Every time I go to Kozy Kitchen they have fresh ingredients and their staff is so nice and helpful. It's a pleasure every single time. I look forward to going there many, many more times.

Gotta be Homemade

So I went on another cooking adventure...through a jungle and a rainforest, LOL! I made gluten free meatloaf and it was very good. I used ground chuck and seasoned it then added a couple eggs and some ketchup. I also used the gluten free bread that I blogged about in a previous post. I crumbled the bread and mixed it in. The only thing I'm sad about is that there was not enough ketchup :-( Also, I don't have a loaf pan so I used a Bundt cake pan. This is a good meal to make because you will have enough to make lunch and dinner for a week or two!

On a Side Note...

I know this isn't gluten-free exclusive, but I got these new drinks and I'm in LOVE <3.

First, there is the Nestle Juicy Juice in Sparkling Apple. I must say that apple is my all time favorite fruit...I don't know how many people have a favorite fruit but when it comes to apple I've tried it all: tea, soda, dried, w/ Nutella...the list could go on forever, but back to the matter at hand. This drink is lightly carbonated, but it provides a full serving of fruit!!! When's the last time you had a soda do that??




Then there is Ocean Spray's Sparkling Cranberry. I would buy this over regular soda any day!! I wish they came in bigger cases because buying four at a time isn't enough. Drinking one of these actually makes my day, lol. I have to pace myself so I don't chug it all at once!! If anyone knows of any coupons for this send 'em my way.

Breakfast Items

I am a Breakfast Fanatic, and I used to frequent Waffle House. I adore waffles and french toast and pancakes and English muffins and muffins and well, you get the idea. So here are some breakfast items I have tried and I really like. First is Justin's Almond Butter, I'm not a huge fan of peanut butter so I tried almond butter because I love almonds so much, in the end I think I've found a great breakfast/snack option:


Please excuse my rudimentary spreading of  almond butter on my bread. I can't imagine what this must look like, LOL!

 Again, French Meadow Bakery. This was a VERY good muffin (as you can tell from the empty wrapper, lol) I plan on getting more of these in different flavors so I can have breakfast on the go.
